Sarah chose the recipe for this week’s recipe: stuffed turkey burgers. I liked them. They weren’t my favorite, but they were good. I filled lean ground turkey with mozzarella cheese, roasted red peppers, and jalapenos in this recipe. They are stuffed by creating eight small patties, flattening them, placing your stuffing on top of one, then covering it with another patty and pinching together the edges. As long as you don’t overstuff the burgers, this should be easy.
Making turkey burgers is not something I enjoy because I am always afraid of them not being cooked through, so I overcook them. As well as finding ground turkey to be so dry, I used half ground thigh meat and half ground breast meat. While my neurosis overcooked these burgers, this gave them a nice flavor and kept them from drying out.
Simple and straightforward, the recipe barely calls for seasoning the meat at all. Just salt and pepper after the patties have been formed. Let’s face it; this turkey could use some flavor. My husband just happened to come home with a package of Emeril products when I made these. As a result, I added some of Emeril’s Original Essence to the meat and some Worcestershire sauce. Emeril’s Essence was enjoyable, even though it is just salt, paprika, black pepper, granulated garlic, spices (hmm? ), and onion powder. Also, Emeril’s horseradish mustard was a great addition to our burgers. Thank you, Emeril! 🙂
The burgers have been eaten twice now. Two of the four burgers were frozen for another night. In making the second batch of burgers, I flattened them to cook more quickly, and then I served them on some flat naan bread I had at home. Each burger was also topped with a slice of Monterey Jack cheese. It was terrific, and I liked the burgers more this way than on a thick-fat roll. (I prefer fattening thick juicy burgers) :yes: I loved the bites with the roasted red pepper. If I were to prepare these again, I would chop up the red pepper into small pieces and mix it into the meat instead of stuffing it. We had these with baked potato chips and a simple salad. It was a tasty and easy dinner.
