Bars made with applesauce and spices. Honestly, this isn’t a decision I would have made on my own. It turned out to be quite good, as with most of my recipes. We spiced it up with cinnamon, allspice, and brandy and finished it off with a splash of bourbon. It was the moistest cake I’ve ever had, and the glaze was divine. The glaze was my favorite part. Sugar and fat are the perfect combinations for liquid happiness. To have a nice thick icing, I let my bars completely cool before I made the glaze. Though some of it still seeped into the cake, most of it stayed on top where it belonged.
In the way, it was made, and in its texture and flavor, this cake reminded me of a muffin. I am sure some people bake them into muffins, and I am sure they turned out great. I might make healthier muffins out of this recipe in the future. Apple chunks and nuts were great, and I even liked the raisins, which I could hit or miss. During the holidays, I plan on making these again and making a boozed-up glaze to top it off. I like that idea.
These seemed to be a big hit with him, and I hope the rest of his coworkers like them as well since I’m dumping a whole pan of them in his office this morning. We must get them out of the house. When it comes to anything sweet that I make myself, I’m so untrustworthy. Even if I don’t particularly like something, I will still eat it because I baked it myself.
